Ingredients
- 1 c. guava paste
- 6 Tbsp. cider vinegar
- 1/4 c. dark rum
- 1/4 c. tomato paste
- 1/4 c. fresh lime juice
- 1 Tbsp. soy sauce
- 2 tsp ketchup
- 2 tsp Worcestershire sauce
- 2 Tbsp. chopped fresh onion
- 1 Tbsp. chopped fresh ginger
- 2 x cloves chopped garlic
- 1/2 x scotch bonnet pepper or possibly other warm chili, seeded and chopped Salt and freshly grnd black pepper, to taste
Directions
- Combine in a non reactive pan, simmer till the sauce is slightly thickened and richly flavored...about 5 min. Correct the seasonings, adding S&P to taste.
- Guava paste comes in a flat tin, and after opening, keeps well in frig.
- We like the sauce so much, I just use the whole tin and make a lot, sort of playing with the amounts of the ingredients as I go, and tasting. Keeps well in frig...
- Good with pork, ribs, chicken....
- This is a terrific sauce...we love it!
- I last made it with both mango and guava paste, and used chipotle chilies in it...OH Man, it was wonderfull....
