Ingredients

  • 1 c. minced grilled asparagus, 1/2-inch
  • 2 Tbsp. liquid removed finely minced oil-packed sun-dry tomato
  • 1 Tbsp. finely minced red onion
  • 2 Tbsp. minced red bell pepper
  • 1 Tbsp. extra virgin olive oil
  • 2 Tbsp. green onion, minced
  • 1/2 tsp rice wine vinegar
  • 1/2 tsp Worcestershire sauce
  • 1/2 tsp freshly squeezed lemon, juice
  • 1 tsp Dijon mustard
  • 1 tsp black bean and garlic sauce
  • 1 x salt and pepper, to taste

Directions

  1. In a large, non-reactive bowl, combine sun-dry tomatoes, red pepper, green onion, red onion, extra virgin olive oil, mustard, black bean sauce, vinegar, lemon juice.
  2. Whisk till well combined. Add in salt and pepper to taste.
  3. Add in asparagus pcs and mix gently till well coated with marinade. Serve immediately.
