Ingredients

  • 1 x roasted green chilies - (4 ounce)
  • 1/4 c. cider vinegar
  • 2 Tbsp. freshly-squeezed lime juice
  • 2 x garlic cloves chopped
  • 1/4 c. fresh cilantro leaves
  • 1 tsp Dijon mustard
  • 1/2 tsp dry basil
  • 1 pch dry oregano
  • 1 dsh Tabasco sauce
  • 1 tsp light brown sugar
  • 1/2 c. extra virgin olive oil Salt to taste Freshly-grnd black pepper to taste

Directions

  1. Combine all ingredients except oil in a blender or possibly food processor. Process till smooth. While motor is running, add in oil in a thin stream till emulsified. Season with salt and pepper.
  2. Serve some extra on the side or possibly save for another time. Also makes a tasty marinade for fish, poultry, pork or possibly upland game.
  3. Comments: How you cook the fish or possibly the type of fish you use is up to you. This spirited vinaigrette is great on just about anything. I like it with grilled fish and hot flour tortillas. Either hot the vinaigrette slightly or possibly serve at room temperature. When the fish is cooked, spoon some of the vinaigrette over, but do not drown it.
