Ingredients
- 1 Tbsp. extra virgin olive oil
- 1 med white onion, diced
- 4 x green onions, minced
- 4 x cloves garlic, chopped
- 1/2 lb very lean grnd pork
- 8 x tomatillos, minced
- 3 med New Mexico green chiles, roast, peel & dice
- 1 Tbsp. minced fresh cilantro
- 1 1/2 c. water
- 1/2 c. white wine
- 1/2 tsp grnd cumin
- 1/4 tsp crushed oregano
- 1 tsp freshly grnd black pepper
- 1/2 tsp salt
Directions
- Heat the oil in a deep saute/fry pan and saute/fry the onion, green onions, garlic, and pork till the pork is browned through. Add in the rest of the ingredients except pepper and salt and cook over medium-high heat till it comes to a boil. Stir in the pepper and salt, reduce the heat, and simmer uncovered for 10 min.
- Yield: Approx. 4 c.
- SERVING SUGGESTIONS: Use over Large eggs Benedict instead of hollandaise sauce, or possibly with huevos rancheros. It's also outstanding spooned over warm white rice.
