Ingredients

  • 4 x Large eggs
  • 2 c. sugar
  • 1 c. oil
  • 2 c. unbleached flour
  • 2 tsp baking pwdr
  • 1 1/2 tsp baking soda
  • 1 tsp grnd cinnamon
  • 1 tsp vanilla extract
  • 3 c. shredded fresh beets
  • 1 c. minced walnuts
  • 8 ounce cream cheese softened
  • 1/2 c. whipping cream - (to 3/4 c.)
  • 1 tsp almond extract
  • 1/2 c. powdered sugar

Directions

  1. For the Cake: Beat together the Large eggs, sugar and oil till fluffy. Sift together the flour, baking pwdr, baking soda and cinnamon in a large bowl. Add in the dry ingredients to the egg mix and stir well to blend. Add in the vanilla, beets and walnuts. Beat together 1 minute.
  2. Pour the batter into a 13- by 9-inch baking pan. Bake the cake at 350 degrees till a toothpick inserted in the middle comes out clean, 35 to 45 min.
  3. For the Cream Cheese Frosting: Blend together the cream cheese, whipping cream, almond extract and powdered sugar in a blender or possibly mixer till fluffy. Spoon onto the cooled cake or possibly serve separately to dollop the cake.
  4. This recipe yields 12 servings.
