%20so%20soups%20and%20casseroles%20are%20not%20sounding%20good%20just%20yet.%20It%20had%20to%20be%20a%20different%20kind%20of%20comfort%20food!%3C/p%3E%3Cp%3EI%20had%20some%20packaged%20whole%20wheat%20gnocchi%20and%20some%20fresh%20basil,%20so%20I%20decided%20to%20throw%20together%20a%20cashew-based%20pesto%20cream%20sauce.%20I%20also%20sauteed%20some%20shiitake%20mushrooms%20to%20top%20it%20off%20and%20the%20result%20was%20A-M-A-Z-I-N-G!%20So,%20so%20good!%3C/p%3E%3Cp%3EI%20typically%20avoid%20packaged%20foods,%20but%20I%20do%20have%20a%20few%20things%20in%20my%20pantry%20for%20occasionally%20throwing%20together%20dinner%20when%20I%20want%20something%20different.%20I%20found%20this%20egg-free%20whole%20wheat%20gnocchi%20at%20Trader%20Joe's:%3C/p%3E%3Cp%3EGnocchi%20is%20an%20excellent%20%22vehicle%22%20for%20the%20pesto%20cream%20sauce.%20The%20textures%20are%20perfect%20together.%20The%20shiitake%20mushrooms%20add%20an%20extra%20dimension%20of%20flavor,%20texture,%20and%20richness-%20I%20love%20them!%20I%20also%20sauteed%20some%20kale%20to%20go%20on%20the%20side%20and%20the%20meal%20couldn't%20have%20been%20better!%3C/p%3E%3Cp%3EGnocchi:%20Cook%20according%20to%20package%20directions.%20This%20typically%20means%20boiling%20for%20about%202-3%20minutes.%3C/p%3E%3Cp%3EMushrooms:%20Slice%20and%20saute%20in%20Earth%20Balance%20margarine%20(or%20olive%20oil)%20until%20browned%20and%20the%20smaller%20ones%20are%20beginning%20to%20get%20a%20little%20crunchy.%3C/p%3E%3Cp%3EKale:%20Saute%202%20minced%20garlic%20cloves%20in%20a%20bit%20of%20olive%20oil%20until%20beginning%20to%20brown.%20Add%20kale%20(washed%20and%20chopped)%20and%20saute%20until%20it%20is%20bright%20green%20and%20the%20thicker%20stems%20are%20somewhat%20tender.%20I%20season%20mine%20with%20red%20pepper%20flakes,%20a%20squeeze%20of%20lemon%20juice,%20and%20gomasio%20(lightly%20toasted%20sesame%20seeds%20processed%20in%20the%20blender%20with%20sea%20salt%20until%20it%20is%20a%20course%20powder%20like%20ground%20parmesan%20cheese).%3C/p%3E%3Cp%3EPesto%20cream%20sauce%3C/p%3E%3Cp%3EServes%20about%203%20to%204%20people%3C/p%3E%3Cp%3EPlace%20all%20ingredients%20in%20a%20blender%20and%20blend%20until%20completely%20smooth.%20Taste%20and%20add%20more%20sea%20salt,%20if%20necessary.%20To%20serve,%20place%20the%20hot%20gnocchi%20on%20a%20plate%20and%20top%20with%20the%20cream%20sauce%20then%20add%20the%20mushrooms%20over%20the%20top.%3C/p%3E%3Cp%3EMy%20husband%20and%20I%20enjoyed%20this%20delicious%20comfort%20food%20with%20a%20very%20smooth%20glass%20of%20zinfandel%20from%20Parducci%20Winery.%20Ahhh,%20the%20perfect%20way%20to%20kick%20off%20a%20long%20weekend!%3C/p%3E){kind=link}
