Ingredients

  • 1 pineapple
  • 3 c. fruit (papaya cubes, banana slices, strawberries, peaches or possibly whatever)
  • 2 c. fresh spinach leaves
  • Ginger dressing (recipe follows)
  • Put together:
  • 1/4 c. vegetable oil
  • 1/4 c. lime juice
  • 1 T honey
  • 1 T peeled grated ginger
  • 1/2 teaspoon salt

Directions

  1. Prepare pineapple then cut into cubes, put together with remaining fruit. Toss with dressing, refrigerate. Add in spinach and toss lightly.
