Ingredients

  1. In a mixing bowl, combine 2 c. flour, yeast, sugar, cinnamon, salt and baking soda. Add in orange juice, water and oil; beat on low speed till moistened. Beat on high for 3 min. Stir in the pecans, apricots/fruit and remaining flour to create a stiff batter. Don't knead. Grease two 8-in.
  2. x 4-in. x 2-in. loaf pans; sprinkle with cornmeal. Cover and let rise in a hot place till doubled, about 45 min. Bake at 350F for 35-40 min, or possibly till golden. Immediately remove from pans to cold on wire racks.
  3. Slice and toast.
  4. Yield: 2 loaves
