Ingredients
- Slightly adapted from Cinnamon Freud who adapted it from Bon Apetit via Epicurious
- 1 c. dry black beans
- Olive oil
- 1 medium onion, chopped
- 1 c. bell pepper, chopped (I used a mixture of green and gold bell peppers.)
- 1 large jalapeno, seeded and chopped
- 3 large cloves of garlic, minced
- 1 T. dried Mexican oregano
- 1 t. ground coriander
- 1/8 c. dark brown sugar
- 2 T. red wine vinegar
- Sea Salt and fresh ground pepper, to taste

%3C/p%3E%3Cp%3EI%20am%20so%20in%20awe%20of%20bloggers%20who%20have%20cool%20(and%20intelligent)%20names%20for%20their%20blogs%E2%80%A6blogs%20like%20%20Cinnamon%20Freud.%20%20%20%20%20How%20clever%20cool%20is%20that?%20%20%20I%20love%20it!%20%20%20Karen%20is%20the%20genius%20blogger%20behind%20this%20cerebral%20foodie%20blog.%20%20%20And,%20luckily,%20maybe%20some%20help%20was%20on%20the%20way%20for%20me.%3C/p%3E%3Cp%3EThere%20were%20%20three%20recipes%20that%20I%20had%20been%20stalking:%20%20%20Italian%20Meatball%20Burgers%20(which%20I%20am%20still%20going%20to%20try),%20Corn%20Cakes%20with%20Goat%20Cheese%20(because%20they%20contain%20squash%20and%20I%20have%20a%20lot%20of%20it)%20and%20Frijoles%20Negros%20Cuban%20Black%20Beans.%20%20%20%20I%20landed%20on%20the%20black%20beans.%3C/p%3E%3Cp%3EI%20had%20(keyword%20here%20is%20had)%20a%20marvelous%20Cuban%20Black%20Bean%20recipe%20once.%20%20%20(Keyword%20here%20is%20once).%20%20%20%20%20I%20even%20remember%20what%20recipe%20book%20I%20found%20it%20in.%20%20%20%20(Again,%20notice%20the%20past%20tense.)%20%20%20%20%20It%20has%20disappeared.%20%20%20%20%20%20I%20have%20searched%20this%20recipe%20book%20and%20many%20others%20in%20my%20archives%20trying%20to%20find%20this%20recipe.%20%20%20%20All%20I%20remember%20is%20it%20had%20black%20beans%20(no%20brainer),%20sweet%20peppers,%20and%20a%20bit%20of%20brown%20sugar.%20%20%20IT%20WAS%20DELICIOUS!%20%20%20%20Since%20I%20am%20obviously%20doomed%20to%20never%20find%20it%20again,%20I%20decided%20to%20try%20to%20recapture%20its%20goodness%20with%20some%20regression%20therapy%20with%20Cinnamon%20Freud.%3C/p%3E%3Cp%3EI%20slightly%20adapted%20her%20recipe%20a%20bit%20by%20adding%20green%20peppers,%20one%20jalapeno%20for%20heat,%20and%20a%20bit%20of%20brown%20sugar.%3C/p%3E%3Cp%3EFRIJOLES%20NEGROS%20CUBAN%20BLACK%20BEANS%3C/p%3E%3Cp%3ERinse%20beans.%20%20%20In%20a%20medium%20bowl,%20cover%20beans%20with%20water.%20%20Soak%20for%206-8%20hours.%20%20Drain.%3C/p%3E%3Cp%3EIn%20a%20medium%20saucepan,%20combine%20beans%20with%203%20cups%20of%20warm%20water.%20%20Simmer%20over%20low%20heat%20for%201%201/2-%202%20hours,%20adding%20additional%20warm%20water%20as%20needed.%20%20Drain%20and%20set%20aside.%3C/p%3E%3Cp%3EIf%20you%20don%E2%80%99t%20have%206-8%20hours%20to%20soak%20beans,%20%20use%20this%20quick%20method:%20%20Place%20beans%20in%20cooking%20pot%20and%20add%20water%20so%20that%20three%20inches%20cover%20beans.%20%20Bring%20to%20a%20boil,%20cover%20with%20lid,%20and%20turn%20off%20heat.%20%20%20Let%20set%20for%2090%20minutes.%20%20After%2090%20minutes,%20drain%20and%20rinse.%20%20(Discard%20soaking%20water%E2%80%94water%20a%20plant!)%20%20Place%20back%20in%20pan%20and%20add%20three%20cups%20of%20new%20water.%20%20%20Bring%20to%20boil,%20cover,%20and%20reduce%20to%20simmer.%20%20%20Simmer%20for%20another%2090%20minutes.%3C/p%3E%3Cp%3EIn%20a%20large%20skillet,%20heat%20olive%20oil%20over%20medium%20heat.%20%20Add%20onions%20and%20peppers%20and%20cook%20for%205-7%20minutes,%20until%20softened.Add%20garlic%20and%20cook%201-2%20additional%20minutes.%20%20%20Add%20oregano,%20coriander,%20brown%20sugar%20and%20%20vinegar.%20Cook%20for%202-3%20minutes%20until%20vinegar%20has%20evaporated.%20%20Add%20black%20beans%20and%20toss%20to%20reheat.%20%20%20Remove%20from%20heat,%20season%20with%20salt%20and%20pepper%20to%20taste.%20%20Serves%204%20as%20a%20side%20dish.%3C/p%3E%3Cp%3EThanks,%20Karen,%20for%20helping%20me%20recapture%20a%20favorite%20dish.%20%20%20I%20got%20pretty%20darn%20close%20with%20your%20assistance.%3C/p%3E%3Cp%3E(Also,%20please%20remember%20Abigail%20and%20her%20family%20today.%20%20%20I%20just%20potted%20this%20hibiscus%20up%20by%20the%20front%20door.)%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
