Fried Plantains (Tostonos De Platanos) Recipe

Ingredients

  • 3 c. Water
  • 3 x Green plantains, peeled and cut diagonally, 1 inch thick slices
  • 3 x Cloves garlic, minced
  • 3 tsp Salt Vegetable oil for deep frying

Directions

  1. In large bowl, combine water, plantains, garlic and 2 3/4 tsp. salt.
  2. Let stand 15 min.
  3. Drain plantains well, reserving liquid. Dry plantains on paper towels.
  4. In large skillet, heat 1/2" oil till deep-fat thermometer registers 375 degrees. Add in plantains and fry 7 min. Drain plantains on paper towels.
  5. When cold sufficient to handle, use palm of hand to flatten plantains to 1/4" thickness. Dip plantains in reserved liquid and dry on paper towels.
  6. Refry plantains in warm oil till crisp and golden brown; drain on paper towels.
  7. Lightly sprinkle remaining 1/4 tsp. salt over plantains and serve warm.
  8. NOTES : A staple of the Hispanic diet, the starchy green bananas known as plantains are often deep-fried and served as an appetizer.
