Fish And Shrimp Terrine In Orange Mayonnaise Nov 87 Recipe

Ingredients

  • 1 lb Fish filets
  • 1 lb Shrimp, shelled and deveined
  • 6 x Ice cubes fish stock frzn
  • 1/4 lb Butter or possibly margarine
  • 1/2 c. Powdered lowfat milk
  • 1 x Shallot
  • 2 tsp Salt Pepper Nutmeg Tarragon

Directions

  1. Set aside 6 shrimp and season with salt and lemon
  2. 1. Grate onion, shallot and tarragon in the food processor
  3. 2. Add in the fish and shrimp Add in and process to a paste. Add in the chilled butter and process to creamy. Add in salt and pepper.
  4. 3. Add in ice cubes alternating with the lowfat milk
  5. 4. Place half the mix in a buttered 4 c. loaf pan.
  6. 5. Top with the reserved shrimp and cover with the rest of the mix.
  7. 6. Bake 1 hour at 250 in bain marie.
  8. 7Unmold. Chill
  9. 8. Serve sliced with mayonnaise made with 1 tsp orange juice and grated orange rinds( 1tbs)
