Ingredients

  • 3 large gold beets, roasted and diced, with greens washed, de-ribbed and rough chopped
  • 2-3 c. cooked farro (can sub brown rice)
  • 1 red pepper, seeded, cored and diced
  • 2 garlic cloves, minced
  • 1 small shallot, diced
  • 1/2 c. crumbled feta or goat cheese
  • 1/3 c. pecan pieces
  • salt and pepper to taste
