Egg And Sausage Breakfast Tortillas

Ingredients

  • 8 x Flour tortillas
  • 1/2 lb Milkd bulk pork sausage
  • 1/2 c. Minced green onions
  • 4 x Large eggs
  • 2 Tbsp. Whipping cream
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 2 Tbsp. Margarine
  • 1/2 c. Shredded cheddar cheese Picante sauce

Directions

  1. Wrap tortillas tightly in foil. Bake at 350 F. for 15 min. Combine sausage and green onion in a large skillet. Cook till sausage is browned and onion tender. Stir to crumble meat. Drain well. Set aside. Combine Large eggs, cream salt and pepper. Beat well. Heat margarine in heavy skillet over Medium heat. Add in Large eggs, cook till hard but still moist. Add in sausage mix and cheese. Stir well. Spoon into center of tortillas. Roll up.
  2. Serve immediately with picante sauce.
  3. Serves 8.
