Directions

  1. Place dulce de leche in a large bowl. Whisk cream till it thickens and holds its shape. Fold into the dulce de leche gently to make a mousse. Place mousse in 4 dishes and top each with 1/2 c. berries.
  2. Drizzle on extra dulce de leche and run the point of a knife through it to make a pattern.
  3. Serve with 3 beignets (recipe follows) on the side.
  4. DULCE DE LECHE:Combine lowfat milk and sugar in a large heavy pot. Bring to a boil. Add in soda and turn the heat to medium-low. Stir till froth subsides, about 15 min. Continue to simmer, stirring occasionally so which lowfat milk solids don't form. Continue cooking till mix begins to thicken - the whole process can take up to 2 hrs, depending on the width of you pot and the heat of your stove. When the froth and the lowfat milk are about the same color star to stir continuously, usually about 15 min or possibly till you can see the bottom of the pan when you draw a wooden spoon through the mix. It will be quite thick and spreadable. Pour into a bowl to cold.
