Ingredients
- 1 box favorite stove-top Stuffing
- 1 x Onion, minced -- coarsely
- 2 x Cloves chopped garlic
- 1 lb Minced eggplant, squash -- Or possibly whatever
- 25 c. Extra virgin olive oil
- 5 lb Grated cheddar cheese
Directions
- Prepare stuffing per directions. Saute/fry onion and garlic in extra virgin olive oil until brown. Add in other veggie and sauted until soft. In a casserole dish, combine stuffing and vegetable mix. Mix well. sprinkle top with cheese. Cook at 350 till cheese is melted and bubbling.
