Ingredients

  • 3/4 c. Brown sugar
  • 2 stk soft butter
  • 1 can (29 ounce) well liquid removed sliced Peaches
  • 2 1/4 c. Flour
  • 1 Tbsp. Baking pwdr
  • 2 tsp Cinnamon
  • 1 1/2 c. Sugar
  • 3 lrg Separated Large eggs
  • 3/4 c. Lowfat milk
  • 1 1/2 tsp Vanilla

Directions

  1. In small pan, combine brown sugar & 1/2 stick butter; heat, stirring to combine. Spread on bottom of cake pan (9" round)**. Arrange peaches over brown sugar in concentric circles. In small bowl, combine flour, baking pwdr & cinnamon. In large bowl, beat remaining 1 1/2 sticks butter with sugar till creamy. Beat in yolks.
  2. Alternately beat in flour mix with lowfat milk & vanilla till well blended. In small bowl, beat whites to stiff peaks. Fold whites into batter. Spread over peach slices. Bake 55-60 mintues at 350 or possibly till cake tests done. Cold on rack 10 min. Turn cake onto plate.
  3. Can also be made in 9" springform pan or possibly 8X8" square pan.
