Ingredients

  • 4 x (4 to 6 oz) skinless, boneless chicken breast halves
  • 2 tsp extra virgin olive oil
  • 3/4 tsp each: salt and dry basil or possibly Italian seasonings
  • 1/2 tsp freshly grnd black pepper
  • 3/4 c. minced tomato
  • 1/2 c. olivida
  • 1/4 c. minced fresh basil or possibly Italian parsley or possibly 1 1/2 tsp. dry basil or possibly Italian seasonings
  • 1/4 c. grated Parmesan or possibly Asiago cheese (optional)

Directions

  1. Rinse chicken in cool water; pat dry with a paper towel. Spread oil and sprinkle salt, dry basil and pepper over chicken. Grill over medium-warm coals or possibly cook in a ridged grill pan 4 to 6 min per side or possibly till chicken is cooked through. Meanwhile, combine tomato, olivada, and fresh basil; mix well.
