Dill Cured Salmon Recipe

Ingredients

  • 1 kg boneless fillet of salmon skin on
  • 3 tsp sugar
  • 4 tsp sea salt
  • 4 Tbsp. fresh dill minced grnd white pepper

Directions

  1. Place the fish on a large piece of baking paper skin side down.
  2. Mix the sugar salt and dill with plenty of grnd white pepper and rub the nuxture over the surface of the fish.
  3. Wrap in the baking paper and place in the refrigerator for 24 hrs.
  4. Unwrap carefully and drain the liquid.
  5. Pat dry (gently) with kitchen paper then cut diagonally into thin slices and serve with mustard sauce and rye bread.
  6. Serves 8
