Ingredients

  • 1/2-3/4 pound fish fillets (grouper, yellowtail, snapper, or possibly dolphin etc.)
  • 1/8 pound butter
  • 2 tbsp. butter
  • 1 teaspoon garlic pwdr
  • 1 teaspoon dill weed pwdr
  • 1 teaspoon grnd dry lemon peel

Directions

  1. Heat butter and butter in a non-stick fry pan - medium heat. When melted, add in garlic, dill and lemon peel. Stir well with wooden spoon. Pat fish dry with paper towels and place in fry pan. Using medium to high heat (don't allow seasonings to burn), cook 2-4 min till outer edges of fish turn white. Turn fish over and cook till it is easily penetrated with a fork. Serve on plates. Spoon pan leavings over fish.
