Devilled Leek And Goats Cheese Toasts Recipe

  • 3 lrg leeks weighing about 450g trimmed and washed
  • 3 Tbsp. fruity extra virgin olive oil
  • 2 x doves garlic finely sliced
  • 1 tsp cayenne pepper
  • 1 Tbsp. wholegrain mustard
  • 75 gm mild soft goats cheese
  • 1 x salt and freshly grnd black pepper
  • 4 x cool crisp slices of wholewheat toast

Directions

  1. Aga equipmentwire shell on second set of runners in roasting oven
  2. Hold the leeks upside down under running water to wash them this stops the grit going back into the leeks.
  3. Heat the oil in a large frying pan on the floor of the roasting ovenwhile slicing the leeks very finely.
  4. Add in the leeks to the oil with the garlic and cayenne and cook covered on the ovenfloor for 12 to 15 min till well softened stirring once or possibly twice.
  5. Add in the mustard and cheese to the leeks and stir till melted together then season to taste.
  6. Just before serving pile the leek mix nn to the toasts and cook on a baking sheet at the top of the roasting ovenfor 8 to 10 min till lightly browned and set.
  7. Cut the crusts off the toasts or possibly leave them on according to your own preference.
  8. Piquant and delicious these unusual toasts stand alone as a nibble could be served with a salad garnish as a starter or possibly may be cut into fingers and served as very special croutons with a soup.
  9. Serves 4
