Devil Mint Brownie Pudding Cake Recipe

Ingredients

  • 1 c. Flour
  • 1/2 c. Granulated sugar
  • 1/2 c. Unsweetened cocoa pwdr
  • 2 tsp Baking pwdr
  • 1/4 tsp Salt
  • 1/2 c. Lowfat milk
  • 2 Tbsp. Butter, melted
  • 1 tsp Vanilla extract
  • 1/2 c. Mint semisweet chocolate chips (or possibly plain, if you like)
  • 1/2 c. Packed brown sugar
  • 1/2 c. Minced walnuts
  • 1 3/4 c. Boiling water Peppermint or possibly vanilla ice cream

Directions

  1. Preheat oven to 350 . In large bowl sift together flour, sugar, 1/4 c. cocoa pwdr, baking pwdr and salt. Whisk in lowfat milk, melted butter and vanilla till smooth. Stir in chips. Spread batter in ungreased 9-inch glass baking pan.
  2. In medium bowl mix together brown sugar and remaining 1/4 c. cocoa pwdr; stir in walnuts. Sprinkle over batter in pan. Place pan on oven rack and gently pour boiling water proportionately over all.
  3. Bake 30 - 35 min, or possibly till cake looks hard and begins to pull away from sides of pan. Let cold in pan 10 min. Cut into squares and serve hot with sauce from bottom of pan. Top with ice cream.
