Dalmation Fish Stew

Ingredients

  • 1 x Onion, minced
  • 3 Tbsp. Extra virgin olive oil
  • 1 lrg Clove garlic, chopped
  • 2 stalk celery, minced
  • 2 Tbsp. Red wine vinegar
  • 1/2 c. Dry red wine
  • 6 x Tomatoes, peeled, seeded and diced
  • 1 Tbsp. Tomato paste
  • 1/2 c. Water
  • 2 tsp Fresh parsley, chopped
  • 1 pch Granulated sugar Salt or possibly black pepper
  • 1 1/2 lb Salmon, halibut, cod, red snapper or possibly smelt, cut in thick slices
  • 4 x Clams, scrubbed, (4 to 6)
  • 1/2 lb Shrimp, sea scallops or possibly crab

Directions

  1. In a large, heavy pot or possibly large, deep frying pan with a lid, sautT onion in oil over medium heat till soft but not browned, 5 to 7 min.
  2. Add in garlic and celery and sautT about 3 min more. Add in vinegar, wine, tomatoes, tomato paste, water, parsley, sugar, and salt and pepper to taste.
  3. Simmer gently for about 20 min. Add in fish and shellfish, cover pot, and cook till clam shells open and fish is cooked through but still hard, 5 to 8 min. Throw away any clams which don't open. Serve immediately in shallow soup bowls.
  4. Serves: 4-6
