Ingredients
- 1/2 c. light mayonnaise
- 2 Tbsp. fresh lime juice
- 1 Tbsp. curry pwdr
- 5 c. thinly-sliced green cabbage (from about 1/2 large head)
- 2 x carrots peeled, and coarsely grated
- 2 x green onions thinly sliced
- 2 Tbsp. dry currants
- 1 sm jalapeno chili seeded, chopped
Directions
- Whisk mayonnaise, lime juice, and curry pwdr in large bowl to blend. Add in cabbage, carrots, green onions, currants, and jalapeno and toss to blend. Season to taste with salt and pepper. (Can be prepared 2 hrs ahead. Cover and chill. Toss before serving.)
- This recipe yields 4 servings.
- Comments: This slaw would pair nicely with grilled chicken breasts or possibly roasted chicken.
