Ingredients

  • Pork Carnitas con Chilies
  • 3 pounds boneless pork,
  • cut into 1-inch cubes
  • 2 large onions, coarsely chopped
  • 1 large red pepper, seeded and chopped
  • 1 large green pepper, seeded and chopped
  • 1 large yellow pepper, seeded and chopped
  • 3 garlic cloves, minced
  • 1 jalapeno, seeded and minced
  • 1/4 t cayenne pepper
  • 1/2 t dried oregano
  • 3/4 t ground cumin
  • 1 t salt
  • 2 T cornstarch
  • 1 T red wine vinegar
  • 1 T water
  • 1- 4-oz can chopped mild diced green chilies
  • avocado slices
