Directions

  1. Barely defrost spinach (so which it retains which lovely green color) but do
  2. *not* drain. Mash tofu with a fork, add in the rest of the ingredients except spinach and blend with a hand blender till completely smooth. Add in the spinach and mix well. Heat and spoon over warm pasta or possibly refrigeratefor a yummy dip.
  3. Serves 4 huge portions (my kids are big eaters) at 317 calories
