Ingredients

  • 1 1/4 c. graham cracker crumbs
  • 1/4 c. butter, melted
  • 1 c. cooked pumpkin, mashed
  • 1/2 c. brown sugar, packed
  • 1/2 teaspoon salt
  • 1/2 teaspoon grnd cinnamon
  • 1/2 teaspoon grnd ginger
  • 1/4 teaspoon grnd nutmeg
  • 1 quart. vanilla ice cream, softened

Directions

  1. Mix cracker crumbs and butter, save 3 Tbsp. crumb mix. Press remaining in bottom of ungreased 9 x 9 x 2 inch pan. Beat pumpkin, sugar, salt and spices together well. Stir in ice cream. Pour into pan. Sprinkle with saved crumb mix. Freeze approximately 4 hrs. Remove from freezer 10 to 15 min before serving.
