Cream Cheese Spinach Pasta Recipe

This was one of those open the fridge and see what happens meals and it turned out amazing! I hope I get the ingreident measures right, so bear in mind your tastes when making it and adjust accordingly.

Great side dish for blackened salmon

Ingredients

  • 4 oz cream cheese
  • 2 (ish) gloves garlic, minced
  • 1/2 Tb butter (or you could use olive oil)
  • A few large handful of fresh spinach
  • Salt and pepper to taste
  • 2 nests of 18th Ave. Pasta Co. Cajun Black Spice linguini (reserve the cooking water)

Directions

  1. Boil a quart or so of water with some salt.
  2. Cook the pasta for about 3-5 minutes
  3. Strain out the pasta but keep the water.
  4. In a pan, melt the butter and fry the garlic quickly to develop flavor.
  5. Add the cream cheese, and ladel on the warm pasta water to melt it to the right consistency. This totally depends on your taste if you want a thicker or thinner sauce.
  6. Once you have the sauce where you want it, wilt in several handful of fresh spinach.
  7. Add back in the cooked pasta and more water if needed.
  8. Season with salt and pepper.
