Ingredients
- 6 c. sliced yellow squash
- 6 c. sliced courgette
- 2 c. sliced onions
- 1 Tbsp. pickling salt
- 3 c. white vinegar, 5% acidity
- 4 1/2 c. sugar
- 1 x green pepper diced
- 2 tsp celery seed
- 2 tsp mustard seeds
Directions
- Combine first three ingredients in a large bowl; sprinkle with salt and let stand 1 hour. Drain and pack in warm jars.
- Bring vinegar and next four ingredients to a boil in a large saucepan. Pour warm mix into jars. Remove air bubbles. Seal with lid and process in boiling water bath for 20 min.
