Cornish Hens And Brown Rice Dressing Recipe

Ingredients

  • 4 x Cornish hens, (4 to 6)
  • 1/4 c. onion, minced
  • 1 c. celery, minced Salt, to taste
  • 9 slc bacon
  • 1 box brown rice, (10 ounce.) cook according to directions
  • 1/2 c. lowfat milk
  • 1 can cream of chicken soup
  • 1 tsp salt
  • 1/4 tsp sage
  • 1/4 tsp poultry seasoning
  • 1 can mushrooms, (4 ounce.) Butter Salt and pepper Paprika Remove giblets from hens, simmer giblets with onion and celery in sufficient salted water to cover. Drain reserving liquid. Chop giblets and set aside. Fry 6 slices of bacon till crisp, crumble. Cook rice.

Directions

  1. In large bowl, slowly add in lowfat milk to soup, stir till smooth. Add in seasonings, giblets, vegetables, bacon, rice and mushrooms. Mix well.
  2. Place dressing a greased 9x11-inch dish. Place hens on top of the dressing and grease with butter; season with salt, pepper and paprika. Place remaining strips of uncooked bacon on top of hens. Cover with foil. Bake for 2 hrs at 325 degrees, basting every 1/2 hour with reserved giblet liquid. Remove foil last 1/2 hour. Serve hens on platter and rice in a separate bowl.
