  • 1 c. Yellow cornmeal
  • 1 c. Enriched, all-purpose flour
  • 3 Tbsp. Sugar
  • 1 Tbsp. Baking pwdr
  • 1/4 tsp Salt
  • 1/4 c. Oil
  • 1 c. Skim lowfat milk Egg substitute equivalent to 2 Large eggs

Directions

  1. 1. Preheat oven to 425 F.
  2. 2. Combine dry ingredients in a bowl.
  3. 3. Stir in oil, lowfat milk, and egg substitute only till flour is moistened. Don't overmix.
  4. 4. Pour into an oiled 8 x 8-inich pan.
  5. 5. Bake for 20-25 min.
