Ingredients
- 1/2 c. extra virgin olive oil
- 1 Tbsp. chopped garlic
- 1/2 c. finely minced lemongrass, tender inner part only
- 1/4 c. minced fresh ginger
- 1/4 c. minced fresh parsley
- 1 pch salt and pepper
- 1 lb jumbo shrimp, shelled, deveined wooden skewers, soaked in water, for an hour
Directions
- In a large bowl, stir together oil, garlic, ginger, lemon grass, parsley, salt and pepper till well combined.
- Put shrimp in bowl with marinade, toss to coat, thread on skewers, then cover and chill for 2 hrs.
- Preheat grill to medium. Lightly oil rack. Brush excess marinade off shrimp. Grill shrimp for 2-3 min on each side, or possibly till flesh is opaque and the outsides are slightly charred.
