Cold Cucumber And Spinach Soup

Ingredients

  • 1 bn Green onions, sliced
  • 2 Tbsp. Butter
  • 4 c. Diced cucumbers
  • 3 c. Chicken broth
  • 1 c. Minced, fresh spinach
  • 1/2 c. Sliced, peeled potatoes
  • 1/2 tsp Salt
  • 1 Tbsp. Lemon juice Freshly grnd pepper to taste
  • 1 c. Light cream Radishes Green onions

Directions

  1. In a saucepan, saute/fry green onions in butter till they are softened. Add in cucumbers, chicken broth, spinach, potatoes, salt, lemon juice and pepper.
  2. Simmer uncovered till the potatoes are tender. Transfer the mix to a blender in batches and puree. Transfer the puree to a bowl and stir in the light cream. Let soup cold and refrigeratefor several hrs, or possibly overnight.
  3. Garnish each serving with thin slices of radishes and/or possibly green onions.
