%20and%20a%20chicken%20dish%20cooked%20in%20cider.%3C/p%3E%3Cp%3EIn%20late%20September,%20at%20the%20grocery%20store%20to%20buy%20ingredients%20for%20a%20Thai%20basil%20chicken%20recipe,%20I%20was%20confronted%20by%20a%20freebie%20booth%20giving%20away%20samples%20of%20pumpkin%20pie%20and%20cider.%20The%20samples%20were%20okay,%20and%20then%20I%20started%20thinking%20about%20the%20cider.%20Then%20I%20started%20to%20think%20about%20how%20Meredith%20probably%20won't%20like%20all%20of%20that%20garlic%20in%20the%20Thai%20basil%20chicken,%20and%20maybe%20I%20should%20wait%20until%20after%20the%20baby%20is%20born%20and%20Meredith%20likes%20garlic%20again.%20Then%20I%20started%20to%20think%20about%20the%20cider%20chicken%20recipe.%3C/p%3E%3Cp%3EThen%20I%20walked%20away%20with%20half%20a%20gallon%20of%20cider.%3C/p%3E%3Cp%3EI%20didn't%20have%20herbs%20de%20Provence%20or%20bone-and-skin-on%20chicken%20on%20hand,%20but%20I%20improvised%20a%20bit%20and%20the%20result%20was%20excellent.%20I%20imagine%20following%20her%20recipe%20to%20the%20letter%20would%20have%20tasted%20even%20better,%20but%20I'll%20save%20that%20for%20another%20time.%3C/p%3E%3Cp%3ECider-glazed%20Chicken%3C/p%3E%3Cp%3EHeat%203%20tbsp%20oil%20on%20medium%20in%20a%20deep%20pan.%3C/p%3E%3Cp%3EToss%20chicken%20in%201%20tbsp%20oil%20and%20brown%20on%20both%20sides%20for%2015%20minutes,%20turning%20after%2010%20minutes.%3C/p%3E%3Cp%3ESet%20the%20chicken%20aside%20in%20a%20separate%20bowl%20and%20saute%20onion%20in%20remaining%20oil%20for%201%20minute.%20Add%20mustard,%20vinegar,%20fennel,%20rosemary%20and%20thyme%20and%20stir.%3C/p%3E%3Cp%3EAdd%20cider,%20stir%20and%20add%20back%20chicken.%3C/p%3E%3Cp%3ECover%20and%20let%20mixture%20boil%20on%20high%20for%2030%20seconds%20before%20reducing%20to%20low.%3C/p%3E%3Cp%3ELet%20simmer%20for%2045%20minutes.%3C/p%3E%3Cp%3ESet%20the%20chicken%20aside%20again%20and%20boil%20down%20the%20sauce%20until%20thickened.%3C/p%3E%3Cp%3EPour%20sauce%20over%20chicken%20and%20serve.%3C/p%3E%3Cp%3ERecipes%20by%20the%20Haggis%20and%20the%20Herring:%20tasty%20world%20recipes%20tested%20in%20our%20kitchen%3C/p%3E%3Cp%3ETry%20other%20tasty%20recipes%3C/p%3E){kind=link}
