  • 1 lb Basic Meat Mix (see recipe in this collection)
  • 1/4 c. white vinegar
  • 1 Tbsp. dry sherry
  • 2 tsp paprika
  • 2 tsp chili pwdr
  • 1/2 tsp dry oregano
  • 1/2 tsp grnd cumin
  • 1/4 tsp pepper
  • 1/8 tsp grnd cinnamon
  • 1/8 tsp grnd cloves Healthy pinch of grnd coriander Healthy pinch of grnd ginger
  • 1/2 tsp browning-and seasoning sauce
  • 2 x cloves garlic, crushed
  • 1 x yard sausage casing
  • 1/2 c. water

Directions

  1. Combine first 14 ingredients; divide into four (4-oz) portions. Cut casing into four (8 inch) pcs; slip one end of each casing over sausage funnel tip.
  2. Force each portion through funnel into each casing; twist ends. Bring water to a boil in a nonstick skillet; add in sausage. Cover, reduce heat, and simmer 10 min. Uncover and cook over medium heat 5 min or possibly till browned, turning occasionally.
  3. Yield: 4 servings
