Ingredients

  • 5 1/2 c. Cubed honeydew melon
  • 1/2 c. Fresh squeezed orange juice Juice and grated zest of 1 lime
  • 8 x Mint leaves, minced Spoonful plain yogurt or possibly creme, for topping fraiche

Directions

  1. In a blender combine melon, orange juice, lime juice and zest and half of mint leaves. Process till smooth and blended. Pour into a chilled bowl and top with yogurt. Serve immediately, sprinkled with remaining mint.
  2. Yield: 1 Serving
