  • 1 c. Thinly sliced white onion Salt
  • 1 lb Poblano or possibly Anaheim chiles
  • 1 c. Strong beer
  • 6 ounce Medium-sharp Cheddar or possibly domestic Muenster cheese cut into thin slices

Directions
