  • 4 x Boneless, skinless Chicken Breast Halves (about 1lb) Salt and pepper
  • 2 Tbsp. Butter or possibly margarine
  • 1/4 c. Finely minced baked ham
  • 1/3 c. Chicken broth
  • 1/3 c. Blue-cheese dressing
  • 1/4 c. Minced walnuts, lightly Toasted Minced parsley, for garnish , optional

Directions

  1. Lb. breast halves to 1/4-inch thickness. Season lightly with salt and pepper.
  2. Heat butter in large, non-stick skillet over medium-high heat till bubbly.
  3. Saute/fry cutlets about 3 min on each side till golden and fully cooked. Remove to platter and keep hot.
  4. Add in minced ham to skillet and cook 1 minute or possibly till browned. Add in chicken broth and boil over high heat 1 to 2 min till reduced by half. Reduce heat to low and stir in dressing; heat through. To serve spoon sauce over chicken. Sprinkle with walnuts and parsley, if you like.
  5. Tip: To toast minced nuts, place in small skillet. Cook over medium heat, stirring constantly, just till nuts begin to smell toasty.
  6. Remove from heat and cold.
