Ingredients

  • 2 boneless, skinless chicken breast halves
  • 1/8 teaspoon grnd pepper
  • 1/2 teaspoon minced cilantro
  • 1/4 c. creamy Ranch style dressing
  • 3/4 teaspoon prepared mustard
  • 2 T diced celery
  • 1/4 c. minced cucumbers
  • 1/4 c. seeded minced tomato
  • 4 croissants, cut lengthwise in halves
  • 2 T butter

Directions

  1. Cook chicken breasts in microwave till done about 3 to 4 min. Chill till cool sufficient to handle, about 10 min. Cut chicken into 1/4 inch pcs. Place chicken, pepper, cilantro, dressing, mustard, celery, cucumber and tomato in bowl and toss. Cover and chill till chilled. Just before serving, spread cut sides of croissant halves with butter. Spread with chicken mix and enjoy. Yield: 4 servings.
