Directions

  1. 1. Heat butter and oil in pan, fry pork, onions, garlic
  2. 2. add in mushrooms, fry gently, remove ingredients from pan
  3. 3. dredge chicken pcs in seasoned flour and saute/fry in the pan for 5 to 10 min till well brown.
  4. 4. return mushrooms, onions and pork to pan, add in salt, pepper, thyme, bay leaves and parsley.
  5. 5. cover and cook over low heat for 20 - 30 min.
  6. 6. hot brandy, ignite and add in to the pan, allow to burn for 1 minute, then extinguish by pouring in the red wine. add in sugar.
  7. 7. blend flour with some of the liquid, add in to dish, stir until thickened.
  8. serve warm, garnish with finely minced parsley and mashed potatoes.
  9. serves 6
