Chicken Curry with Basmati Rice Recipe

Ingredients

  • 1 1/2 cups basmati rice
  • 10 skinless, bone-on chicken breasts
  • 2 medium onions, chopped
  • 6 cloves garlic, minced
  • 2 tablespoons fresh ginger, minced
  • 2 tablespoons curry powder
  • 1 tablespoon ground coriander
  • 1 teaspoon ground red pepper
  • 3 cups chicken stock
  • 1 15 oz can chick peas, rinsed and drained
  • 1 14 oz can diced tomatoes, drained
  • 2 cups frozen peas, thawed
  • salt and pepper, to taste
  • 2 tablespoons fresh cilantro, chopped
  • lime wedges for garnish
