Chicken Cacciatore A Recipe

Ingredients

  • 8 x Chicken Pcs, small
  • 1 ounce Plain flour
  • 3 Tbsp. Extra virgin olive oil
  • 3 x Cloves garlic, crushed
  • 2 x Bay leaves
  • 300 ml Red wine Salt and pepper
  • 4 ounce Black olives
  • 14 ounce Can tomatoes Minced parsley to garnish

Directions

  1. Coat chicken pcs in flour. Fry in oil till golden. Remove and drain off excess fat. Return chicken to pan, add in garlic, bay leaves, wine and seasoning. Simmer for 20 mins. Add in olives and tomatoes and simmer for a further 20 mins. Serve garnished with minced parsley.
