Ingredients Convert Measures

  •     Boneless chicken breast halve, skin on
  •     Extra virgin olive oil
  •     Dry white wine
  •     Salt
  •     Pepper
  •     Garlic cloves
  •     Pesto

Directions

  1. Marinate boned chicken breasts (with skin) in extra virgin olive oil and dry white wine, plus salt and pepper to taste. Set aside an hour.
  2. Mix several cloves minced garlic into a little pesto, and stuff beneath the skin. Cook over medium-warm coals till chicken is just opaque and lightly marked from grill, 4 min per side.
