Chicken And White Bean Cassoulet Recipe

Ingredients

  •     Extra virgin olive oil flavored cooking spray
  • 1/4 tsp salt
  • 1/4 tsp freshly grnd pepper
  • 12 ounce skinless/boneless chicken breasts
  • 1 Tbsp. extra virgin olive oil
  • 2 slc of turkey bacon (I used regular bacon for this...that has more fat)
  • 6 c. sliced cabbage
  • 3 c. sliced onions
  • 3 x cloves garlic chopped
  • 1/2 tsp dry rosemary
  • 1 can (19 ounce) white beans
  • 1/2 c. plain fresh bread crumbs.

Directions

  1. Pre-heat your oven to 375 F. Coat a 3 Quart. casserole with the cooking spray. Spring salt and pepper over chicken. Heat oil in a large non-stick skillet over medium-high heat. Add in chicken and cook for 2 min on each side, or possibly till browned. Cut the chicken into 3/4 inch cubes and set aside. Cook the bacon in the same skillet over medium high heat till crisp. Remove from skillet, crumble and set aside.
  2. Add in the cabbage, onions and garlic to the skillet and saute/fry till the cabbage is crisp/tender, about 4 min. Combine chicken, cabbage mix, rosemary and beans in the casserole dish, and top with bread crumbs. Bake till heated through. Top with crumbled bacon and serve.
  3. Serves 6.
