Ingredients
- 8 ounce rotini cooked
- 2 Tbsp. extra virgin olive oil
- 2 whl boneless skinless chicken breasts cut into strips
- 1 c. broccoli florets (fresh)
- 1 c. carrots curled
- 1/2 c. red onion sliced
- 1/4 c. water
- 1/2 tsp chicken bouillon or possibly flavored
- 1/2 tsp dry tarragon
- 2 Tbsp. Grated Parmesan cheese
Directions
- In large skillet, heat oil; add in chicken broc, carrots and onion. Cook and stir over medium heat till broc is tender-crisp. Add in water, bouillon and tarragon; cook and stir till chicken is cooked thru. Add in warm cooked rotini and cheese, toss to coat. Serve immediately.
