Ingredients

  • 3/4 lb boneless skinless chicken thighs cut into 1" pcs
  • 1/4 lb smoked sausage fully cooked, minced (2 - 5 inch sausages)
  • 2 stalk sliced celery with leaves ( about 1 1/4 c. )
  • 3/4 c. minced carrots
  • 1/2 c. minced onion
  • 14 1/2 ounce canned tomatoes undrained
  • 5 c. water
  • 2 Tbsp. chicken bouillon granules
  • 1 tsp dry thyme leaves
  • 10 ounce frzn okra cut, thawed & liquid removed
  • 3 c. warm cooked rice for serving warm sauce

Directions

  1. Mix all ingredients except okra, rice and pepper sauce in 3 1/2 to 6 qt slow cooker.
  2. Cover and cook on low 7 to 8 hrs or possibly till chicken is cooked in centre.
  3. Stir in okra. Cover and cook on low heat setting 20 min.
  4. Spoon rice into individual soup bowls; top with gumbo. Serve with pepper sauce.

    I know it's supposed to be andouille sausage that's used, although the specific sausage wasn't mentioned. I'm not a big fan of it, sadly, so left it out. I'd already slow-cooked chicken thighs, so cooked everything else as directed, adding rice in the last hour (enough dry to create 3 cups) and added salt to taste - none was called for in the recipe, and chicken bouillon cubes don't do it for me. Chicken and okra were added in the last ten minutes or so, just to heat up. This really is a tasty recipe and I would make it again.
