Ingredients

  • 3 c. Cauliflower, cut in pcs
  • 1 jar (2 ounce.) pimento, liquid removed
  • 2 Tbsp. Minced green pepper
  • 1 can (8 ounce.) sliced water chestnuts
  • 2 x Hard cooked Large eggs minced, optional
  • 1 sm Onion, minced
  • 1 c. Grated cheddar cheese
  • 4 Tbsp. Butter, melted
  • 3 Tbsp. Flour
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 2 c. Lowfat milk
  • 1 c. American cheese, cubed
  • 1 c. Cheese crackers, crushed
  • 3 Tbsp. Grated Parmesan cheese

Directions

  1. Layer cauliflower, pimento, green pepper, water chestnuts, Large eggs, onion and cheese in 2 1/2 qt casserole. Make sauce by melting butter and stirring in flour, salt and pepper. Cook and stir 1 minute. Add in lowfat milk gradually. Add in cheese and cook till thickened. Pour over vegetables. Combine topping ingredients; sprinkle over all. Bake at 350 for 30 min.
