,%20vegetables%20(spinach,%20zucchini,%20leek,%20chard,%20peppers,%20etc.),%20cheeses%20(feta,%20Turkish%20white%20cheese%20etc.)%20as%20well%20as%20eggs,%20herbs%20and%20spices.%3C/p%3E%3Cp%3EThere%20are%20quite%20a%20few%20different%20ways%20of%20making%20the%20dough%20or%20pastry%20for%20these%20g%C3%B6zleme.%20Some%20used%20yeast%20in%20the%20dough,%20some%20didn't,%20some%20even%20used%20sourdough%20to%20make%20the%20dough.%20But%20I%20found%20this%20recipe%20on%20Ozlem's%20Turkish%20Table%20and%20since%20it's%20coming%20from%20a%20Turkish%20blogger%20I%20knew%20it%20must%20be%20an%20authentic%20recipe.%3C/p%3E%3Cp%3EI%20stuffed%20my%20g%C3%B6zleme%20with%20cheese,%20potato%20and%20spinach%20because%20my%20kids%20love%20this%20combination.%20I%20used%20Turkish%20red%20pepper%20paste%20to%20give%20some%20spiciness%20to%20the%20filling,%20but%20it%20can%20be%20easily%20substituted%20with%20some%20red%20pepper%20flakes.%20I%20loved%20how%20flaky%20and%20soft%20the%20final%20pastry%20ended%20up%20being.%20These%20are%20great%20to%20serve%20as%20snack%20with%20some%20tea%20or%20as%20a%20light%20meal%20with%20a%20salad.%3C/p%3E%3Cp%3ERecipe%20adapted%20from%20here:%3C/p%3E%3Cp%3ECheese%20&%20Potato%20G%C3%B6zleme%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EMake%20the%20dough:%20Combine%20the%20flour(s),%20yeast,%20sugar,%20salt%20and%20yogurt%20in%20a%20mixing%20bowl.%20Add%20enough%20water%20to%20make%20a%20soft,%20pliable%20dough.%20Knead%20for%204~5%20minutes.%20Cover%20with%20a%20kitchen%20towel%20and%20set%20aside%20to%20rise%20for%201%20hour%20or%20until%20it%20doubles%20in%20volume.%3C/p%3E%3Cp%3EMake%20the%20filling:%20In%20the%20meantime,%20combine%20the%20mashed%20potatoes,%20red%20pepper%20paste%20(or%20red%20pepper%20flakes),%20feta%20cheese,%20parsley,%20olive%20oil,%20salt%20and%20pepper%20in%20a%20bowl.%20Taste%20and%20adjust%20the%20seasoning.%3C/p%3E%3Cp%3EMake%20the%20G%C3%B6zleme:%20Once%20the%20dough%20is%20doubled,%20then%20gently%20deflate%20the%20dough%20and%20divide%20it%20into%208~10%20pieces.%3C/p%3E%3Cp%3ETake%20a%20piece%20and%20roll%20it%20out%20as%20thin%20as%20you%20can.%20Sprinkle%20some%20dry%20flour%20to%20help%20you%20out%20with%20the%20rolling.%3C/p%3E%3Cp%3EFold%20the%20left%20and%20right%20sides%20of%20the%20dough%20so%20that%20they%20meet%20in%20the%20edges%20meet%20in%20the%20middle.%3C/p%3E%3Cp%3ESpread%20about%202~3tbsp%20of%20the%20filling%20into%20the%20middle%20of%20the%20folded%20sides.%20Then%20fold%20the%20top%20and%20bottom%20edges%20over%20the%20filling%20making%20sure%20to%20cover%20it%20completely.%20Press%20the%20edges%20gently%20to%20seal.%20Repeat%20with%20the%20remaining%20dough%20and%20filling.%3C/p%3E%3Cp%3EHeat%20a%20griddle%20or%20a%20non-stick%20pan%20on%20medium%20heat.%20Brush%20one%20side%20of%20the%20gozleme%20with%20olive%20oil%20and%20place%20oil%20side%20down%20in%20the%20pan%20and%20cook%20for%202~3%20minutes%20or%20until%20golden%20brown.%20Brush%20the%20other%20side%20with%20oil%20and%20cook%20for%20another%202~3%20minutes.%3C/p%3E%3Cp%3ERepeat%20with%20the%20remaining%20gozlemes.%3C/p%3E%3Cp%3ECut%20the%20gozlemes%20into%20quarters%20or%20halves%20or%20serve%20as%20is.%3C/p%3E%3Cp%3E%23BreadBakers%20is%20a%20group%20of%20bread%20loving%20bakers%20who%20get%20together%20once%20a%20month%20to%20bake%20bread%20with%20a%20common%20ingredient%20or%20theme.%20You%20can%20see%20all%20our%20of%20lovely%20bread%20by%20following%20our%20Pinterest%20board%20right%20here.%20Links%20are%20also%20updated%20after%20each%20event%20on%20the%20%23BreadBakers%20home%20page.%3C/p%3E%3Cp%3ECheck%20out%20what%20my%20Griddle%20Breads%20that%20my%20fellow%20bakers%20have%20made%20for%20you:%3C/p%3E){kind=link}
