Ingredients

  • 1 lrg cauliflower
  • 1 lrg red pepper, roasted, and, cut into strips Lemon Dressing
  • 1 tsp white sugar
  • 3/4 tsp salt
  • 1/2 tsp pepper tsp juice and grated rind of one lemon
  • 1 x finely minced onion
  • 2 clv garlic, chopped
  • 1/2 c. extra virgin olive oil

Directions

  1. In a pot of boiling salted water, cook cauliflower for about 2 min. Remove and drain.
  2. Wrap in foil and cook covered on grill for another 6-8 min.
  3. Broil red peppers till charred all over. Remove and place in plastic bag. Let steam for 10 min, then peel, seed and cut into strips.
  4. Lemon Dressing:Combine all ingredients and mix well. Pour over vegetables and toss well.
