Capellini Cacio E Pepe (Angel Hair Pasta) Recipe

Ingredients

  • 1 pkt Capellini, (Angel hair pasta)
  • 1 x Red pepper
  • 1 x Green pepper
  • 1 x Yellow pepper
  • 2 x Cloves garlic
  • 1 x Teacup of extra virgin olive oil
  • 2 x Bay leaves
  • 2 bn Basil
  • 2 ounce Pitted black olives, minced
  • 1 ounce Butter Salt and pepper
  • 4 Tbsp. Grated pecorino or possibly parmesan cheese Coriander

Directions

  1. Remove stalk and seed of peppers, wash and slice. Using a large pan, heat up some extra virgin olive oil till very warm, add in the peppers, garlic, bay leaf and coriander and cooked for 5-8 min, stirring occasionally.
  2. Bring a large pan of water to the boil and cook the pasta for 3 min. Keep checking as this pasta cooks very quickly. Drain and add in to the sauce with a little of the water and cheese.
  3. Mix well and serve.
