Candied Figs, Apricots Or Tomatoes Recipe

Ingredients

  • 4 quart Plus 2 c. water
  • 2 Tbsp. Baking soda
  • 30 x Figs, pear tomatoes or possibly apricots
  • 1 1/2 c. Granulated sugar

Directions

  1. In large bowl, combine 4 qts water and baking soda. Add in fruit and soak 10 min. Drain. In large saucepan, combine sugar and 2 c. water. Bring syrup to a boil; add in fruit and simmer 20 min. Remove from heat and allow to cold. Simmer mix 20 min each day till syrup is absorbed.
  2. Dry fruit on waxed paper on trays in the sun. Dredge fruit with sugar and store in an airtight container.
